Lemon Curd Tart with Almond Crust

This time of year we get so many lemons on our lemon tree that it makes me sad to see them go unused. I decided to attempt making a lemon tart. For my first time, the results came out great. It was super easy to make. The lemon and almond flavors work together so well. This is one refreshing tart. If you love lemons like I do then I have no doubt that you will LOVE this as well. This is such an easy recipe and all the ingredients are everyday ingredients that you will have in your pantry.

Ingredients
Almond crust ingredients
Lemon curd filling
Servings: 9" tart
Instructions
  1. Preheat the oven to 400º. Place the flour, almonds, sugar, butter, almond extract and salt in a food processor and pulse until blended. Slowly add water, 1 tablespoon at a time and pulse until the mixture forms a soft dough like texture.
  2. Grease a 9" tart pan and press the dough evenly onto the bottom and sides of the pan. Using a fork poke the crust in a couple of places to prevent the crust from rising. Bake the crust at 400º for 15-20 minutes or until golden brown. Cool on a wire rack and reduce the oven temperature to 325º.
  3. Place a small saucepan over medium heat. Add the eggs, egg yolks, sugar, lemon juice, lemon peel, and salt and whisk until well blended. Then add the cubed butter and cook while constantly whisking. Lemon curd is ready when the mixture is thickened and it coats the back of a spoon.
  4. Pour the lemon curd into the prepared crust and let bake for 10-12 minutes or until set. Cool on a wire rack and then refrigerate for the curd to completely set and thicken.
